"Science-backed" has been used so loosely it has stopped carrying information. It usually means somebody read a study about one ingredient and put the ingredient in the product.
What it means here is duller and more useful: there is a food technologist on staff, there is a documented process, and things get rejected.
1. It starts with a dish, not an ingredient
We do not begin with a trending ingredient and search for somewhere to put it. We begin with something people in this region already eat — adai, pesarattu, koozh, a particular laddu — and ask whether the slow parts can be moved off the home cook's evening without ruining it.
If the dish only works made fresh from scratch, we do not make it. Several ideas have died here, which is the cheapest place for an idea to die.
2. The formulation
This is where the food technologist takes over: grain-to-pulse ratios, moisture targets, particle size after milling, how the blend behaves when hydrated, whether the fat in the nuts will stay stable for the shelf life we want.
The traditional proportions are the starting point and are usually close to right. Where they need adjusting, it is generally because a home cook was compensating in real time — soaking longer because the grain was older, adding water by eye — and a packaged mix has to work without that judgement available.
3. The kitchen panel
A formulation that is technically correct can still be food nobody wants. So every product is cooked and eaten by a panel including home cooks — people who have made these dishes their whole lives and are not impressed by a specification sheet.
They are asked plain questions. Does the dosai spread properly? Does it tear? Does it taste like adai, or like a health product pretending to be adai? Would you serve this to your family without explaining it first?
That last question has failed more formulations than any laboratory measurement. It is the veto we take most seriously, because a nutritious product eaten once is worth less than an ordinary one eaten weekly.
4. Shelf life, established rather than assumed
You cannot know how something keeps by reasoning about it. You store it and you check it.
Because we use no artificial preservatives, our shelf lives are shorter than the category norm and we state them plainly: eight months for laddus, six months for the mixes and podis. Those numbers are a consequence of the no-preservative decision, not a marketing choice.
5. What goes on the label
Every claim has to survive a simple test: can we defend this in writing, to somebody hostile?
That rules out a great deal. It is why nothing containing jaggery is described as low-glycemic. It is why we do not print borrowed micronutrient figures for moringa when published analyses vary by a factor of three. It is why we say "pulverised" and not "stone-ground". Each would sell slightly better and none would be true.
6. Where it stops
Not every product survives. We have complete ingredient lists for a Dindigul biryani mix that we like, and it is not listed, because it is not ready to our satisfaction. It will go up when it is.
