What We Change, What We Keep, and What We Refuse

"Traditional" is doing a lot of work on food packaging these days, and it usually means nothing. Almost everything sold as traditional has been altered — for shelf life, for cost, for scale. The question is not whether a recipe has been changed. It is which changes were made, and whether anybody will tell you.

So here is our list.

What we changed

We moved the slow work upstream. Soaking, sprouting, drying and milling used to happen at home over a day or more. We do them at our facility in batches, so what reaches you needs minutes rather than hours. This is the biggest change we have made and the reason the products exist.

We standardised the proportions. A grandmother's recipe is a range, adjusted by eye and by season. That is a virtue at home and a problem at scale — the pack you buy in March should taste like the one from November. So the ratios are fixed, written down and followed.

We pulverise rather than grind by stone. Our grain is milled with modern equipment. We mention it because "stone-ground" gets attached to traditional food regardless of whether it happened, and we will not claim a process we do not use.

We made the portions smaller. Household laddus were made for festivals and physical work. A 150 g pack of six is a different eating pattern, sized for the one people actually have.

What we kept

Jaggery, not refined sugar or a substitute. Not because jaggery is a health food — it is sugar, and we have written separately about why we will not pretend otherwise — but because it is what these sweets are made with, and it carries a flavour sugar does not.

The grain and pulse pairings. The combinations in adai and pesarattu are not arbitrary; they are the result of a very long period of trial and error and they work both nutritionally and in the pan. We did not improve on them. We would not know how.

Sprouting — the most time-consuming step and the first a cost accountant would remove. And small batches, which limit how fast we can grow and mean we run out of things.

What we refuse

Artificial preservatives, colours and flavours. This constraint shapes everything else. It is why our laddus keep for eight months and our mixes and podis for six, rather than the two years a preservative system would allow.

Claims we cannot stand behind. No low-glycemic language on anything containing jaggery. No micronutrient figures borrowed from someone else's analysis. No health outcomes. No "clinically proven" anything.

Invented heritage. We were founded in 2018. We will not print a story about a recipe passed down through five generations of our family, because it would be a nice story and it would not be true. The recipes are traditional to this region. The company is new. Those are two different claims and we keep them separate.

Reviews we did not earn. We have no customer testimonials on this site yet, because we have not collected real ones. Writing them ourselves would be dishonest and, under India's consumer protection rules on fake reviews, illegal. The space stays empty until it is filled properly.

You can see the results across the whole range. A list of what a company refuses is more informative than a list of what it promises, and considerably harder to fake.
