What Goes in the Tiffin Box

Assorted energy laddus, dense and portable enough for a lunchbox

The tiffin box is the hardest brief in home cooking. The food must be made before anyone is properly awake. It must sit in a bag for four hours without refrigeration. It must be eaten in a short break, often standing, against a friend's more interesting lunch. And it must come home empty, or the exercise has failed.

Nutrition is the fifth constraint, not the first. Any advice ignoring the other four is not advice.

The returned-uneaten problem

The most nutritious lunch in the world scores zero if it comes back. This sounds obvious and is routinely ignored, mostly in favour of things that are good in principle and unappealing at eleven in the morning, cold, in a plastic box.

So the first test is not "is this healthy". It is "will a distracted nine-year-old eat it". Everything else follows from passing that test.

What travels well

  • Dry, dense items. No free moisture means no leaking and no sogginess. This is why the laddu form survives — it was, among other things, travel food.
  • Well-cooked grain with fat and acid. Lemon rice, tamarind rice and their millet equivalents were journey food before they were lunchbox food.
  • Podi with idli or dosai. Dry powder does not spoil, and it rescues something that has gone cold.
  • Things eaten with hands, quickly. A break is short. Cutlery loses.

What travels badly: fresh curd in the hot months, anything relying on being warm, anything needing assembly.

The energy shape of a school day

A break at eleven, then nothing until three or four. You want a lunch that does not spike and crash — which in practice means fibre, protein and fat alongside the carbohydrate rather than carbohydrate alone.

A plain white-rice lunch does less well than the same rice with a good dal, or with a millet in the mix. Whole grains and pulses digest more slowly. This is not exotic nutrition science; it is why the pairing of a grain and a legume exists in nearly every food culture on earth.

Where sweets fit

Honestly: as sweets.

Our laddus turn up in a lot of tiffin boxes and we are glad about it — they are dense, they travel, they contain sprouted grain and real nuts and nothing artificial, and children eat them without negotiation. That last point is not small. The assorted energy laddus and assorted millet laddus both give variety across a week, and Combo 1 covers both.

But they are sweetened with jaggery, which is sugar, and we will not dress that up. A laddu is the nice part of the lunchbox, not its nutritional backbone. One, alongside a real meal, on some days.

A note on the parent

Packing a lunchbox every morning for a decade is genuinely tiring, done in the least glamorous hour of the day by someone usually also getting themselves out of the door.

Give yourself the allowance you would give a friend. Some days it is a proper spread. Some days it is a dosai from a mix, a podi, and a laddu, and the child comes home with an empty box and no complaints. The second day counts too.
